IngredientsFalafel and tabouli couscous500 gpacket store-bought falafel balls
1 1/2 cupscouscous
2 tbspvegetable or olive oil
1 tbspfinely chopped chives
200 gstore-bought fresh tabouli
2 tbsplemon juice
100 gbaby spinach leaves, torn
1/3 cupstore-bought sun-dried tomato and eggplant dip
StepsFalafel and tabouli couscous1. Place falafel on a microwave-safe plate. Microwave on High (100%) for 1 minute or until heated.
2. Meanwhile, place couscous in a heatproof bowl. Stir in 1 1/2 cups boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Using a fork, fluff couscous and separate grains. Add oil, chives, tabouli, juice and spinach; toss to combine. Season.
3. Stir heated falafel through couscous mixture. Serve topped with dip.
